dvd2xbox also has a logfile function that lets you know how file transfer went. Enable it by going into the settings menu and chosing Logfile Writer to Yes. This should tell you if any files failed to transfer over properly.
If nothing is transferring wrong, I'm guessing it's not a problem with the game disc.
You might then want to try getting the newest version of dvd2box. If you don't have v0.6.0, get it, or even hunt down 0.6.1 (I know it exists, but I'll be damned if I can find it).
Try it then, and if it still doesn't work, I'm going to say it isn't a problem with dvd2xbox.
If it's not a problem with the program or the disc, then chances are it's a problem with your box or some settings on your box. I wouldn't know what to do then...
Alternatively, you could try copying the game over, then deleting the openning cinematic file (not that much of a show anyway :p ). I'll copy my Fable disc over today and try this method to see if it still loads and get back to you. I suppose the first step in that process would be figuring out which file is the openning cinematic.

i downloaded the latest version of DVD2Xbox 0.6.1 off xbins and tried to copy the game from the original unfortunatley no luck. I looked at the log and it read up the top "Couldnt find acl file for title 4D53000D. Using default acl."
optimized burnt copy of fable gets to the opening screen allows me to open a new game starts a new loading screen and just when the bar gets to the 90%mark it says the disk may be scratched etc etc
When i extract an iso i made using qwix or craxtion it has errors when i try to FTP it across sometimes it wont send the files BANDIT_CAMP.wma or FinalAlbion.wad
when i copy the game to my hdd it just runs the opening credits in a loop
if i delete the credits then it does the same as if i inserted a burnt copy
even stranger now when i insert the original game it gets to the last opening animation i hit A to jump to the start screen and the disk scratched thingy appears

The ACL thing is probably what's causing the problem. An ACL is basically a patch that dvd2xbox uses to disable media checks by the xbox.
Somewhere on this site is a file containing a ton of ACLs, but most of them are old, and they're not labeled, so I don't know if Fable is included. Your best bet would probably be to go on #xbins on IRC and request a Fable PAL ACL.
To be clear, the game used to load fine on your xbox from the dvd tray? You could run everything just fine when you played the game the "right" way?
If you want to go back to being able to play it on the DVD until you find the ACL, I would delete any of the folders you copied Fable info to on the HDD and try it again. I don't think dvd2xbox messes with game caches or anything, so that should fix the DDE you get when using the original DVD.
