Then is there any point in getting a mod chip? What's it do? Once you install it then turn the Xbox on would it automatically have UnleashX on it?

If you have a good and fully working softmod you need a chip about as much as you need an STD. Only meaningful difference between chip and soft is the HDD locking requirement. Chips dont require locked HDD. You still have to instal everything with them theyre just a custom BIOS that allows unsigned code set up to bypass the actual XBOX BIOS. You stil have to instal dashboiard, emus apps etc.
You will find 2 schools of thought here guys like me who love softmod and chippers who will tell you hard is superior. All coes down to what you want and whether or not you want to spend 50+ bucks, tear your BOX apart and solder the chip and instal everything. Fact of the matter is by the time you get that chip soldered in Ive already got mine softmodded and loaded with apps and emus (soft is way faster IF you know what youre doing)
Hope that clears it up for ya
