Hi all,
I'm new to the xbox scene (only 2 weeks old) have mod chipped my xbox (after 24 hours) and have a 80GB HDD on it's way to me (arriving Monday) I need to know if there's a way I can copy over saved game files from my retail HDD to my new one, have made a x-over cable ready to connect PC to XBOX but can I FTP under the MS dashboard.

Welcome to xbox-hq, Hozza!
MS dash doesn't allow you to FTP. Many of the "aftermarket" dashs do, like Evolution x (EvoX). Once you have Evox installed, you can then grab your game saves.
The easiest way to do it is with Xbox Save Manager. You run it on your PC and it'll FTP with your Xbox and grab your game saves. It lists them by game name and lists the profile names, where applicable, under the game name as well. When you put in your new drive, you'll use this program to simply reverse the process, from PC to new Xbox hard drive!
My advice: sign up to be a VIP member and you'll have access to even more downloads. I signed up in April of this year and I've never regretted it! Well worth the money. All the other sites would simply tell you "Look for the program at the 'usual sites' ", but I'll tell you that xbox-hq IS the "usual site" for me!

What I don't understand is how can I physically change the HDD and still get the saved game files off the old HDD, Is my only option to get a memory card and save them that way or I'm I missing the bigger picture?

You're missing the bigger picture mate.
Once you have your modchip installed on your Xbox, you can use an Installer CD (like the Xbox-Hq EvoX Auto-Installer) to give your Xbox the ability to become a FTP Server.
There are 2 ways you could back up your gamesaves:
1) Just copy the whole E Drive, and copy it back to the new HDD.
2) Use a Game Saves Manager to backup your gamesaves to your PC, then use it to transfer them back when the new HDD is in.
Hopefully this shows you what you can do a bit more clearer...

Do you have EvoX dash installed on the retail HDD already? If you do, simply FTP into the Xbox, back up the entire HDD, then transfer the game saves to the new HDD by the reverse process.
If you don't have Evox already installed on the retail HDD, I think you can boot up with one of the autoinstaller CDs and then you run Xbox Saves Manager. This is the more "elegant" way of doing it.
